If you are planning on having a barbeque or attending one to celebrate the 4th of July, we have found a great recipe that everyone will love! And if you like to pick fresh berries, you could use them in this recipe too. Take a look!

  • 2 cups flour
  • 1-1/4 cups almonds, finely ground
  • 3/4 cup brown sugar, packed
  • 1 cup butter, cut up
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • zest from one lemon
  • 4 cups unsweetened raspberries, blueberries and blackberries, thawed and drained or fresh
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350 degrees. Line a 13x9x2″ baking pan with foil.
  2. For crust: In a large bowl, stir together the flour, ground almonds, and brown sugar.  Cut in the butter using a pastry blender or a fork, just not your hands because the heat from your hands will melt the butter, do this until mixture resembles fine crumbs. Remove 1-1/2 cups of the crumbs at aside. Press the remaining crumbs evenly into the bottom of foil lined baking pan. Bake for 15 minutes.
  3. For the filling: In a bowl, combine the sugar, cornstarch, and lemon peel.  Add berries and vanilla extract; tossing gently to combine. Spoon berry filling over hot baked crust. Sprinkle with remaining crumbs on top of berries.
  4. Bake about 40 minutes more or until filling is bubbly and topping is lightly browned.  Once cooled enough to handle, using the edges of the foil, lift the pie out of the pan.  Cool completely. Cut into bars.

These bars would be really good topped with vanilla ice cream or whipped cream!
