Recipe Of The Week- Buffalo Chicken Lasagna

OMG this sounds sooooo good and I cant wait to make it! I of course will be using gluten free noodles.

For the Buffalo Chicken Layer:

3 large chicken breasts, cut into ½-inch cubes

½ cup buffalo hot sauce

½ cup Ranch dressing

Salt and pepper

For the Sauce Layer:

1 tablespoon olive oil

2 large shallots, finely diced

1 red bell pepper, finely diced

3 garlic cloves, minced

3 tablespoons tomato paste

1 tablespoon sugar

2 cups buffalo hot sauce

For the Cheese Layer:

1 (15-oz) container ricotta cheese

½ cup bleu cheese dressing

¼ cup Ranch dressing

1 cup sour cream (or plain Greek yogurt)

1 egg, lightly beaten

1½ cups shredded mozzarella cheese

1 teaspoon dried Italian herbs

No-boil lasagna noodles (I will use gluten free)

3 cups shredded mozzarella cheese

3 cups shredded sharp cheddar cheese

1 cup bleu cheese crumbles (optional)

Cook chicken. Once the chicken is cooked, remove from heat and allow to cool. At this point, preheat the oven to 375°F and butter

This sounds really good! You could use veggies from your own garden or from the farmer's market.

  • 1 1/2 teaspoons olive oil
  • 3 1/2 cups chopped zucchini
  • 1 cup chopped onion
  • 2/3 cup chopped carrot
  • 1 1/2 cups fresh corn kernels or frozen whole-kernel corn, thawed
  • 1 cup chopped fresh basil
  • 1/2 teaspoon kosher salt, divided
  • 1/4 teaspoon freshly ground black pepper, divided
  • 1/4 cup all-purpose flour
  • 3 cups 1% low-fat milk
  • 1 cup 1% low-fat cottage cheese
  • 1/2 cup (2 ounces) grated Parmesan cheese
  • 1/8 teaspoon ground nutmeg
  • Cooking spray
  • 9 (about 5 ounces) no-boil lasagna noodles (such as Barilla)
  • 1 cup (4 ounces) preshredded part-skim mozzarella cheese

*When I make this I will use gluten-free noodles and cornstarch instead of flour to make this gluten free.
