This is the time of year many of us go strawberry picking. I love to pick fresh strawberries! There are so many things you can do with them. I freeze a lot of them so I have them all year around for smoothies, but you can also make strawberry shortcake, or jam.

And then of course there is everyone's favorite. Cocktails! Check out this great recipe for Strawberry Mojitos.

This makes one drink so if you are making more than one just double up the recipe as needed.

  • 4-5 fresh strawberries, depending on size
  • Small handful of fresh mint leaves
  • 3 oz simple syrup*
  • 2 oz white rum
  • 1 1/2 tsp fresh lime juice
  • Club soda
  • Lime slices
* Simple syrup is easy to make all you do is take even amounts of sugar and water, heat until the sugar melts, and then cool to room temperature.
  1. Place strawberries, mint, and some ice (crushed ice works best if you have it) in a tall glass.
  2. Muddle the ingredients together with the back of a spoon (or better yet a muddler if you have one)
  3. Add simple syrup, rum, and lime juice.
  4. Pour in enough club soda to fill the glass.
  5. Give the mixture a stir.
  6. Garnish with fresh strawberries and lime slices or even a sprig of mint.
