Gluten Free Raspberry Cream Cheese French Toast Casserole
I came across this recipe and had to share it. It’s gluten free but you could easily make it anyway you would like by using regular bread. Maybe this would be a great Mother’s Day breakfast idea, hint hint Caleb and Alexis!
12 slices Udi’s GF White Sandwich Bread, cubed
2 8oz packages cream cheese, cubed
1 1/2 cups raspberries, fresh or frozen
12 large eggs
1 1/2 cups whole or almond milk
1/3 cup maple syrup
1/2 teaspoon finely grated lemon zest
1/8 teaspoon salt
1. Grease 9×13 inch baking dish and add bread cubes. Drop cream cheese cubes over the top of the bread; sprinkle raspberries over top.
2. In mixing bowl, combine eggs, milk, maple syrup, lemon zest, and salt. Pour mixture over the bread a little at a time until it soaks through but is not soggy. Cover with foil and refrigerate overnight.
3. The next morning, preheat oven to 350 degrees.
4. Bake covered for 30 minutes, then uncover and bake for another 25-30 minutes or until top is a golden brown and the center is set. Let cool for 5 minutes before serving (with some extra maple syrup).
