Remember Valentine's Day, or any day you want a quick treat for your sweetie, by whipping up pretty cherry filled pound cake sticks.

Cherry-Filled Pound Cake (Prep. Time 10 minutes.  Serves 8, full slices. 24, pound cake “sticks”)

One loaf frozen pound cake, thawed

1 can cherry pie filling (or whatever flavor you like

¼ C. powdered sugar

2 tsp. cocoa powder

(1 Tb. butter if using a skillet instead of a non-stick sandwich press)

Pre-heat non-stick sandwich press. If you don’t have a sandwich press or panini press, warm a cast iron skillet and melt about 1 Tbl. Butter in the pan.  Have a piece of aluminum foil and a second heavy pan ready. Cut pound cake into ¼ to 1/3 inch slices.  Spoon pie filling onto four of the slices and spread to the edges.  Top with the second slice and place in hot pan.  Carefully close the press or place aluminum foil on top of the slices and weight down with the second pan.  Cook each side for about 2-4 minutes until lightly toasted.  Cut each slice into three sticks and dust with powdered sugar mixed with cocoa or drizzle chocolate syrup over top.  Guild the lily with a dollop of whipped topping or serve with ice cream if you want.
