I love chicken salad! But it can be unhealthy is you use full fat mayonnaise. But this recipe calls for no mayo! In fact it's rather healthy, but you would never know by how delicious it is. Check it out.

My daughter loved this recipe! You can switch it up a little if you want to make it your own. For instance, I am not a fan of celery in my chicken salad, so you will notice this recipe doesn't have any, but feel free to add them if you like them!

Chutney curried chicken salad

First make some pickled red onions.

  • 1 red onion
  • juice of 1 lime
  • salt/pepper

Slice the red onions thin. I did this by using the slicer attachment in the food processor. Once sliced, add the lime juice, salt and pepper and set aside.

  • 1 rotisserie chicken- meat picked off, discard the skin
  • 1 cup Yogurt plain Greek
  • Curry powder 1 1/2 2TB or less
  • 1 inch of Ginger...fresh grated.
  • 1 large clove garlic
  • Salt and pepper
  • Mango chutney 1/3 cup
  • 2 Green onions/scallions slices diagonal
  • 1/2 cup Toasted sliced almonds

Mix together the yogurt, curry powder, ginger, garlic, salt and pepper. Then add the mango chutney and green onions. Add the chicken and mix all together. Sprinkle the sliced almonds on top.

You can serve this on a roll and top with the red pickled onions, or you can eat it like my daughter and I did and that was just on a plate with no bread. Enjoy!
