Everyone is busy these days but we still want our families to have delicious, healthy home cooked meals. This recipe is super easy, only has a few ingredients, and you probably have most of them already and doesn't take long to make. 

So how about serving this recipe to your family tonight?

  • Boneless Chicken, 3 breasts
  • Limes, 3 or 4
  • Garlic, 4 to 6 cloves
  • Olive Oil
  • Cumin
  • Cayenne or Chili Powder
  • Cilantro, 1/4 cup, snipped
  • Avocado, optional
  1. Mince the garlic, snip the cilantro, Juice three limes and zest one of them. Cut a lime into wedges and slice and the avocado if you like avocados...I don't like them personally, it's a texture thing, but I would slice them up for my children to have.
  2. Cut chicken into chunks.
  3. Pour some olive oil into a saute pan, just enough to not quite cover the bottom. Heat it over medium high heat until it’s very hot, almost smoking. Add the chicken and let it cook.
  4. Once the chicken is browned nicely, sprinkle it generously with cumin and chili powder or pepper. Let it cook another minute or two.
  5. Turn the chicken and let it cook another couple of minutes, long enough to brown. Reduce the heat to medium low and sprinkle in the garlic and lime zest. Stir allowing it to cook another couple of minutes.
  6. Once the chicken is cooked through add the lime juice.
  7. Remove the chicken to a bowl or platter and sprinkle it with cilantro.

You can serve the chicken with lime wedges and avocado slices.
