Anything with bacon is a total yes in my book! So when I came across that in this recipe I knew I had to share with everyone.

This recipe sounds absolutely amazing and perfect for summer grilling. Check out this week's recipe of the week!

  • 2 lbs boneless skinless chicken thighs
  • 6 slices of raw bacon cut into small pieces
  • 3 tbsp  of dark brown sugar, packed
  • 2 tsp of kosher salt
  • 1 tbsp paprika
  • 1 tsp white pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup of bourbon
  • 16 oz barbeque sauce
  1. Light the grill and heat to medium-high.
  2. In the meantime, in a small bowl, combine the barbeque sauce and bourbon. Mix well.
  3. In a food processor, combine the kosher salt, white pepper, onion powder, paprika, garlic powder, dark brown sugar, smoked paprika, and bacon. Pulse until completely smooth.
  4. Put the chicken thigh pieces in a bowl and then rub with the bacon paste. Once well-coated, thread the chicken thigh pieces onto skewers- if using wooden ones, make sure you pre-soak them so they don't catch on fire.
  5. Place the kebabs on the preheated grill. Cook for about 5 minutes per side, or until nearly cooked through.
  6. Brush the kebabs with the bourbon barbecue sauce and cook for an additional minute on each side.
  7. Serve with the remaining BBQ sauce.

I would actually add some pineapple in between the chicken too. I think that would be really good!
