Recipe of the Week – Bacon Bourbon BBQ Chicken Kebabs
Anything with bacon is a total yes in my book! So when I came across that in this recipe I knew I had to share with everyone.
This recipe sounds absolutely amazing and perfect for summer grilling. Check out this week's recipe of the week!
- 2 lbs boneless skinless chicken thighs
- 6 slices of raw bacon cut into small pieces
- 3 tbsp of dark brown sugar, packed
- 2 tsp of kosher salt
- 1 tbsp paprika
- 1 tsp white pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 cup of bourbon
- 16 oz barbeque sauce
- Light the grill and heat to medium-high.
- In the meantime, in a small bowl, combine the barbeque sauce and bourbon. Mix well.
- In a food processor, combine the kosher salt, white pepper, onion powder, paprika, garlic powder, dark brown sugar, smoked paprika, and bacon. Pulse until completely smooth.
- Put the chicken thigh pieces in a bowl and then rub with the bacon paste. Once well-coated, thread the chicken thigh pieces onto skewers- if using wooden ones, make sure you pre-soak them so they don't catch on fire.
- Place the kebabs on the preheated grill. Cook for about 5 minutes per side, or until nearly cooked through.
- Brush the kebabs with the bourbon barbecue sauce and cook for an additional minute on each side.
- Serve with the remaining BBQ sauce.
I would actually add some pineapple in between the chicken too. I think that would be really good!
