Recipe of the Week – Jalapeno Bacon Cheddar Deviled Eggs
If you're looking forward to a Memorial Day barbeque but not sure what to make or what to bring to a party, I found an awesome recipe! These sound so good and look like any crowd pleaser.
I am definitely going to make these, but I don't think I can wait till Memorial Day, I have to make them today!
- 12 eggs
- 4 slices of cooked bacon (crumbled)
- 3 jalapenos
- 1 cup of cheddar cheese (finely shredded)
- 1/3 mayonnaise
- 1/4 red onion (finely diced)
- 2 tablespoons of spicy brown mustard
- A pinch of paprika (optional)
- Put eggs in a saucepan; cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes.
- Remove eggs from hot water, cool under cold running water, and peel.
- Remove seeds and stems from jalapenos, mince 1 pepper. Slice remaining jalapenos into very thin strips. (I use gloves when I am working with jalapenos because you will be sorry if you rub your eyes after cutting them up, even if you wash your hands!)
- Cut the eggs in half lengthwise and take out the yolks and put in a bowl. Mash egg yolks with a fork, stir in minced jalapeno, cheddar cheese, mayonnaise, red onion, and mustard.
- Fill the egg whites with the yolk mixture and sprinkle with bacon and paprika if you're using it.
