I made these for myself and the kids. They are super easy to make, low carb and gluten free!

You can use your imagination and make all sorts of kinds, like spinach and feta, or use bacon instead of ham. Whatever you like!

  • package of ham
  • egg beaters or regular eggs
  • cheese

I placed two pieces of ham into a muffin tin. Then I sprinkled just a little cheddar cheese on top of the ham. I took southern western style egg beaters and filled the ham 3/4 of the way. Then topped with another sprinkle of cheddar cheese.

Bake at 350 for about 25 minutes or until set.
