I love coconut! It just reminds me of summer and the beach for some reason. These bars look amazing and I'm going to have to make them asap! They are also great because there is no baking involved so you could make them in the summer and not have to turn your oven on, which is always a plus!

  • 1 cup unsweetened shredded coconut
  • 1/4 cup agave or pure maple syrup
  • 2 tbsp virgin coconut oil
  • 1/2 tsp pure vanilla extract
  • 1/8 tsp salt

Combine all ingredients in a food processor. (Perhaps you can mix by hand if you don’t have a food processor) Press into a small container and fridge for an hour before trying to cut. Can be stored in the fridge or freezer, for at least a few weeks.

You could even throw some chocolate chips and that would be great!
