Bacon and cheese...do I need to say more?! This recipe sounds so delicious, and it's easy too! I know, us busy moms need easy.

  • 1/2 tsp salt
  • 1-1 1/2 cups shredded Asiago cheese – for melting on top
  • cooked and crumbed
  • 1 egg beaten
  • 1 tablespoon water
  • Oil for frying – about 1/2 – 3/4 cup it will depend on size of skillet
  • 4 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • Preheat oven to 350 degrees
  1. In a small shallow bowl, mix egg and water, this will be to dip chicken in.
  2. In another shallow bowl, mix Parmesan cheese, pepper, salt and garlic, this will be to dip chicken in too and that's why they need to be shallow.
  3. Heat oil over high heat.
  4. Dip each chicken breast in egg mixture then in cheese.
  5. Fry in hot oil until crust is golden brown.
  6. Cover a baking sheet with tin foil.
  7. Put chicken on on baking sheet and bake about 20 minutes.
  8. Remove from oven and turn oven to broil.
  9. Top each piece of chicken with Asiago cheese and bacon then put it back in the oven  under broiler to melt cheese. Watch this carefully because the cheese and bacon can easily burn.It will only take a minute or two to melt the cheese.
  10. This think when I try this recipe I will bake it instead of frying. I will spray it lightly with olive oil spray on both sides and then bake instead of frying. This will lighten up the fat and calories in the recipe.
