Recipe Of The Week- Penne Pasta Salad (Healthy)
Penne Pasta (14.5 oz box) I use gluten-free
1 chopped fresh cucumbers
2 cups carrots chopped into bite-sized pieces
2 cups cherry tomatoes
1/4 cup on chopped onion
1/2 to 1 cup Fat Free Italian Dressing (or low fat)
1/2 cup 2% Sharp cheddar cheese cut into small cubes
20 turkey pepperoni cut in half
Cook pasta till tender. While hot pour in the dressing. Then add all the other ingredients. You can also add broccoli and olives...I don't like them so I don't put them in my pasta salad. Simple and easy!
