Another holiday past and another refrigerator full of left-overs, including turkey.  Here's a Foodie Friday variation on the stand-by left over turkey sandwich.

Southwest Turkey Wrap (prep. 10 minutes)

Per serving:

1 flour tortilla

1/2 C. shredded left-over turkey

1 C. shredded lettuce

Sliced tomato

1 slice pepper jack, Colby, American or cheddar cheese

1/4 C. mayonnaise

1/4 C. sour cream

3 Tb. softened cream cheese

1 Tb. ketchup

2 Tb. hot sauce

1/4 tsp. chili powder

Mix together the mayonnaise, sour cream, cream cheese, ketchup, hot sauce and chili powder and set aside. Heat the turkey in the microwave, place the meat in the middle of the tortilla and top with cheese. Melt the cheese and heat the tortilla in the toaster oven.  Spread the sauce on an open side of the tortilla, put the lettuce and tomato slice on top of the turkey.  Fold up opposite edges of the tortilla and roll, beginning with the edge that has the sauce.  Slice on the diagonal and serve with a side of tortilla chips and salsa.
