If you know me, you know I eat gluten-free. I also try to prepare food that is healthy and low-fat. I also LOVE chicken salad and it's great for me because it's gluten -free and I can make up a bunch of it and leave in the fridge and that way I can grab some when I'm in a hurry. So here is a recipe I made up last night. It's not the traditional chicken salad because I wanted to try to shake it up since I was getting bored of regular chicken salad. And since there is no mayonnaise it's very low-fat!

3 chicken breast...grill them up then chop into small pieces

6 oz of fat-free plain greek yogurt

1/4 cup of red wine vinegar

1 TB of taco seasoning

1 tsp of red pepper flakes

2 tsp of red pepper jelly

1 red pepper, finely chopped

green onion

Mix all together and enjoy! I thought it tasted really good. You can eat plain or in a lettuce wrap, tortilla wrap or bread.
