Today is National Cheese Day, which is the best day ever! We will be celebrating it tonight with some cheese fondue. Here is the recipe that I'll be using.

  • 1 cup dry white wine
  • 2 tbsp cornstarch
  • 8 oz. (2 cups) shredded cheddar cheese
  • 8 oz. (2 cups) shredded pepper jack cheese
  • 1 tsp smoked paprika
  • 3-4 roasted jalapenos (chopped)*

Pour wine and cornstarch into a saucepan on the stove top. Whisk over medium low heat until the cornstarch fully dissolves into the liquid.

Begin adding the shredded cheese to the pot gradually. Whisk the cheese continuously as it melts.

When all of the cheese is melted, check the texture. If it seems too thick or lumpy, add a little more wine and whisk until the texture is smooth and right for dipping.

Add the minced roasted jalapenos to the pot and whisk to blend.

Whisk in the smoked paprika until well blended.

Transfer the melted cheese mixture to your fondue pot.

Then use your imagination! You could dip bread, ham, chicken, broccoli, cauliflower, any steamed veggies would be good, cooked potatoes, tortilla chips and anything else you think would be good for dipping!

*To make roasted jalapenos just line a cookie sheet with aluminum foil and coat the pepper in olive oil. Put under broiler but watch carefully! Let the pepper char and flip. When done, put in zip lock bag for a few minutes. Then peel skin.
